The article presents the importance of cheese in the diet of the population, analyzes the present-day situation and opportunities in the Russian market and offers the prospects of cheese production.

Different approaches to the determination of internal control concept and the scope of its application have been studied. The requirements and the recommendations of Finance Ministry have been analyzed. They concern realization of internal control by an economic agent in comparison with audit standards.
